Adobo Roast Chicken

This is a tasty roast chicken adobo. A classic Filipino savoury dish!




Serves: 4










Ingredients
  • 1.5 kilograms whole chicken
  • 12 cloves of garlic, crushed
  • ¾ cup soy sauce
  • ¾ cup white wine vinegar
  • 5 pieces fresh bay leaf
  • 2 teaspoons whole peppercorn
  • 1 teaspoon chili flakes
  • 3 tablespoons brown sugar










To Serve:
  • steamed rice
  • boiled egg
  • green salad of your choice








Method
  1. In a non-reactive bowl, combine soy sauce, vinegar, brown sugar, garlic, peppercorn and bay leaves and mix well.
  2. In a non-reactive deep pan, place the whole chicken.
  3. Pour the prepared mixed sauce ingredients all over the chicken.
  4. Bring to a boil for 30 minutes and turnover halfway. Spoon adobo sauce and pour in the chicken from time to time.
  5. Meanwhile, pre-heat oven to 180 °C (fan-forced) .
  6. Transfer the boiled whole chicken adobo in the baking dish and pour the reduced adobo sauce all over the chicken.
  7. Bake in oven for 45 minutes or until cooked
  8. Serve warm.
