Pork Rashers Adobo
One pot pork rashers adobo is a Filipino dish that is so easy to cook. So delicious with full of flavour and it has a tender meat that feels melting in your mouth!
Ingredients
- 520 grams pork rashers, chunked
- 4 big cloves of garlic, crushed
- ¼ cup soy sauce
- ¼ cup white wine vinegar
- 5 pieces fresh bay leaf
- 1 teaspoon peppercorn
- 1 tablespoon brown sugar
- 1 to 2 pieces green Thai chili, thinly sliced (optional)
- 1½ cup water
To Serve:
- steamed rice
- boiled egg
Method
- Slice the pork rasher into chunk (2.25 inches, approx.). Set aside.
- Crush the garlic and black peppercorn using mortar and pestle. Set aside.
- In a deep pot add the sliced pork, crushed garlic, black peppercorn, vinegar, soy sauce, brown sugar, bay leaf and chili if using. Toss to coat.
- Pour the water and cover the pot. Bring to a boil then lower the heat to simmer for 45 minutes.
- Remove the cover of the pot and cook until the sauce is completely reduced.
- Serve warm!
Yummy are rashers pork bellies, we don't see rashers in the Toronto area

DeleteWe have adobo almost every other week! I cook mine with pineapple and love the tangy flavour the pineapple imparts to it. I've tried adobo with coconut milk too!
