Breakfast Warm Egg Salad Sandwich Toast

This warm egg salad sandwich toast is so easy and quick to make in the morning for breakfast!





Serves: 2








Ingredients
  • 3 pieces large hard boiled egg
  • 2 tablespoons good quality mayonnaise
  • 1 to 2 tablespoons fresh spring onion, chopped
  • salt and freshly ground pepper to taste
  • 2 pieces, sandwich white bread or bread of your choice 
  • butter for spreading








Method
  1. In a small bowl mash the boiled egg using fork. Stir in the mayonnaise and season with salt and freshly ground black pepper. Add the spring onion and mix well. Set aside.
  2. Meanwhile, toast white bread slices until golden and spread a butter.
  3. Spoon the warm egg salad into each toast and spread it evenly.
  4. Serve warm!









When you harvest or buy a spring onions,  rinse with clean water. And simply keep them in a glass, jug or vase of water on your kitchen countertop. There’s no need to refrigerate  just keep the water topped up and change the water frequently. In that way, the spring onions will stay crunchy and firm for at least a week! One of the best way to store it.
