Asian Style Oven Baked Duck

Asian style oven baked duck, perfect holiday main dish or in any special occasions!

Serves: 6 to 8 








Ingredients
  • 2.3 kilograms whole Australian Grown Duck

For the Marinade
  • ½ cup sweet soy sauce
  • ½ cup hoisin sauce
  • 2 cloves garlic, finely chopped
  • 1 tablespoon ginger, finely chopped
  • 3 pieces anise
  • 3 pieces cloves
  • ⅛ teaspoon Chinese five spice







To Serve: Hoisin Sauce








Method
  1. For the marinade:  In a bowl, combine sweet soy sauce, hoisin sauce, garlic, ginger, star anise, clove, and Chinese five spices. Mix until well combined. Set aside.
  2. Pat dry the skin of the duck using paper towel.
  3. Marinate the whole duck into the prepared marinade for 2 hours up to overnight in the fridge.  Note: Turn over the duck every hour for best results, if you can. 
  4. Take out the marinated duck from the fridge 30 minutes before baking.
  5. Preheat oven to 190°C (fan forced).
  6. Place a wire rack in the baking dish then put the marinated duck on top.
  7. Bake the duck at 190°C for 1 hour and 30 minutes approximately or until cooked with golden brown color. Note: If the wings and the legs start to burn, you can cover it with a foil.
  8. Rest for 20 to 30 minutes before carving.
  9. Serve warm.
