Oven Baked Salmon in Coconut Cream Sauce
A delicious oven baked salmon in flavourful coconut cream sauce!
Serves: 2
Ingredients
For 👉Oven Baked Salmon
- 518 grams, 2 pieces salmon fillet, skin on
- 2 tablespoons extra virgin olive oil
- salt and freshly ground pepper to taste
For Coconut Sauce
- 1 can coconut milk, 165 ml
- 4 to 6 tablespoons coconut cream
- 2 tablespoons olive oil
- 2 tablespoons rice vinegar
- ½ to ¾ cup water
- 2 cloves garlic, chopped
- 1 small onion, chopped
- 1 thumb size ginger, chopped
- 1 to 2 tablespoons fish sauce
- 1 piece large long green chili
- 1 piece ripe tomato, chopped
- 2 cups sliced fresh bok choy
- salt and freshly ground black pepper to taste
To Serve: steamed rice
Method
- 👉Oven bake the salmon fillet. Keep warm and set aside.
- Meanwhile, heat the oil in the pan over medium high heat. Saute garlic, onion and ginger for one minute until soft and fragrant.
- Stir in tomatoes.
- Pour the coconut milk, chili , vinegar and water. Bring to a boil then simmer uncovered for 15 to 20 minutes approx.
- Season with salt, black pepper and fish sauce. Stir in the coconut cream. Cook until the sauce is thick enough.
- Arrange the baked salmon into the coconut sauce. Add the bok choy. Cook for at least 5 minutes.
- Serve warm!
