Crispy Oven Roasted Chicken

A crispy and juicy oven roasted chicken. Simply delicious!




Serves: 4








Ingredients
  • 1 piece, 1.5 kilograms whole chicken
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon salt, fine texture






To Serve:
  • gravy 
  • 👉roast pumpkin
  • roast vegetables of your choice.
  • steamed or boiled vegetables of your choice
  • 👉mashed potatoes
  • green salad 
  • crusty bread rolls (for chicken roll)







Method
  1. Preheat oven to 230°C (fan forced).
  2. Rinse chicken thoroughly inside and out under cold running water. Pat dry with paper towels.

  4. Place the chicken, breast-side up, on a roasting rack set over a roasting pan.
  5. In a small bowl mixed extra virgin olive oil and salt, then brush it all over the chicken.
  6. Roast the chicken for 1 ½ hours or until fully cooked.
  7. Remove the roasted chicken from the oven and let it rest for 15 minutes
  8. Serve warm!
