Oven Baked Salmon in Creamy Leek and Dill Sauce
Simply delicious oven baked salmon in creamy leek and dill sauce is perfect for date night dinner for two at home after a long day at work!

Ingredients
Oven Baked Salmon
- 2 pieces fresh salmon fillet, 492 grams
- 2 tablespoons extra virgin olive oil
- salt and freshly ground pepper to taste
Creamy Leek and Dill Sauce
- 2 tablespoons butter
- 2 cups leek, thinly sliced
- ⅛ cup white wine
- 1 cup thickened cream
- 1 tablespoon fresh dill, chopped
- ⅛ teaspoon fish stock cube or to taste, crumbled
- salt to taste, if needed
To Served:
- fresh dill, for garnish
- lemon, sliced
- roasted vegetables of your choice
- steamed or boiled vegetables of your choice
Method
- 👉Oven Baked Salmon - Pre-heat oven to 180°C (160°C fan forced). Place salmon on a lined baking tray in the middle of oven. Brush the salmon portions with olive oil and season with salt and pepper. Place into oven and bake salmon for 15 to 20 minutes or to your liking. Set aside and keep warm!
- Creamy Leek and Dill Sauce - Meanwhile, melt butter in the pan over medium heat. Add leeks and cook until tender. Add white wine and let it it boil. Pour the cream simmer on medium low heat until mixture is well blended, stirring frequently (approx. 5 minutes). Season with fish cube stock and salt to taste. Lastly, stir in the dill and removed from the heat.
- Serve oven baked salmon and topped with creamy leek and dill sauce!
