Ingredients
- 100 g unsalted butter, melted
- 85 grams dark brown sugar
- 1 piece large egg
- ½ teaspoon vanilla extract
- 200 grams self raising flour
- 1 pinch of fine salt
- 162 grams quality chocolate , (a mixture of Cadbury Old Gold Dark Chocolate Old Jamaica Rum N Raisin and Essentials Cooking Chocolate Dark, Compound Chocolate)
- oil for greasing (optional)
To Serve: cold milk
Method
- Preheat the oven to 170ºC (fan forced).
- Line baking trays with non stick baking paper.
- Cream the butter and sugar in a large bowl.
- Add the egg, vanilla extract and mix well.
- Sift the flour and fold through the flour and salt.
- Stir in the chocolate.
- Roll ¼ cup of the dough into balls and place into prepared lined trays.
- Cover and chill in the fridge for at least 45 minutes.
- Bake in the oven for 22 minutes approximately, or until lightly golden .
- Leave to cool completely.
- Store in sealed container.
