Slow Cooker Beef Spare Ribs Nilaga



A cool days call for a warm meal like beef nilaga, a Filipino beef soup . This is a hearty comfort food recipe.
I bought the beef spare ribs in our local butcher and requested to cut it into small pieces around 2 to 2.5 inches long. The meat is so tender after slow cooking for 4 hours.

Equipment: Slow cooker, 6.5 liter


Ingredients

  • 1 kilo beef spare ribs, cut into 2 to 2.5 inches long
  • 4 - 6 baby potatoes, unpeeled
  • 1 piece onion, quartered
  • 12 pieces beans, trimmed
  • 1/4 cabbage, quartered
  • 1/2 tablespoon peppercorn
  • 1 liter Campbell's Beef Stock (salt reduced)
  • 1 liter water
  • 1 tablespoon fish sauce
  • 1/2 tablespoon beef bouillon cube (optional)

Method

  1. Place the pieces of beef spare ribs, onion, potatoes, peppercorn, beef stock and water in the slow cooker. Slow cook in high for 4 hours.
  2. After 3 hours of slow cooking, season with fish sauce and beef bouillon if more flavour is needed. Then add cabbage and beans. Close the lid and continue cooking for 1 hour.
  3. Serve hot with steamed rice!
