Quick Prawn in Coconut Sauce
A quick delicious meal for our dinner. The coconut sauce has a rich flavour and creamy texture.
For Coconut Sauce
- 500 grams cooked prawn
- 1 can coconut cream, 200 ml
- 2 tablespoons olive oil
- ½ to ¾ cup water
- 2 cloves garlic, chopped
- 1 small onion, chopped
- 1 thumb size ginger, chopped
- 1 tablespoon ginger, garlic and shallot mixture (optional)
- 1 teaspoon chili flakes (optional)
- 1 piece ripe tomato, chopped
- 120 grams spinach
- salt and freshly ground black pepper to taste
To Serve: steamed rice
Method
- Clean the cooked prawn.
- Meanwhile, heat the oil in the pan over medium high heat. Saute garlic, onion and ginger or (garlic, ginger and shallot mixture) for one minute until soft and fragrant.
- Stir in tomatoes.
- Pour the coconut cream, chili and water. Bring to a boil then simmer uncovered for 10 to 15 minutes approx.
- Season with salt and black pepper. Cook until the sauce is thick enough.
- Arrange the cooked prawn into the coconut sauce. Add the spinach. Cook for at least 5 minutes.
- Serve warm.
