Lemon - Smoked Paprika Roast Chicken

Enjoy the citrus fruit season! The lemon goes very well with chicken. A winter winner chicken dinner!



Serves: 4





Ingredients
  • 1.5 kg whole chicken
  • 1 piece lemon, cut into half

 Marinade:
  • ½ cup  extra virgin olive oil
  • grated zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 tablespoon smoked paprika
  • 4 large clove garlic, crushed
  • 2 teaspoons salt
  • freshly ground pepper








To Serve:
  • steamed rice 
  • roasted vegetables of your choice 







Method
  1.  Preheat the oven to 180 °C (fan forced).
  2. Pat the chicken dry thoroughly with paper towels.
  3. Using a mortar and pestle crush the garlic well.
  4. In a small bowl combine well the marinade ingredients (olive oil, lemon zest, lemon juice, garlic, paprika, salt and freshly ground pepper). Set aside.
  5. Spoon the marinade then gently lift the skin of the chicken using your finger or the the same spoon with a marinade without tearing it. Spread and massage the marinade all over the chicken.
  6. Put the 2 half lemon in the cavity of the chicken.
  7. Place the chicken on the baking tray with a rack.
  8. Bake for about 1 hour and 15 minutes or until cook with a golden brown skin.
  9. Serve warm.

  1. The roasted chicken looks so good. I can imagine the smell coming from the oven during roasting time. I too had chicken but not roasted. It was a salted chicken.
