Arroz Caldo
Arroz Caldo is a Filipino glutinous rice porridge with chicken pieces and lots of garlic and ginger. A sliced of calamansi or lemon on the side is the best. This dish is good for breakfast or any time of the day. Our comfort food during winter days! |
Ingredients
To Served:
- 1.3 kilograms chicken, cut into serving pieces
- 4 large cloves garlic, minced
- 1 medium size onion, chopped
- 4 tablespoons ginger, peeled and sliced into thin strips
- 2 tablespoons extra virgin olive oil
- 4 tablespoons fish sauce
- 1 ½ cup glutinous rice, rinsed
- 10 cups water
- freshly ground black pepper to taste
To Served:
For toppings
- hard boiled eggs
- crispy garlic
- spring onions, chopped
- calamansi or lemons, sliced
- freshly ground black pepper or ground white pepper
Method
- Cut the whole chicken into serving pieces.
- In a large pot, heat the oil and saute ginger, onion, and ginger over medium heat until soft.
- Place the chicken pieces into the pot then add fish sauce. Stir well and let it simmer until the chicken pieces is halfway done for about 10 minutes approximately.
- Add in the glutinous rice and stir it quickly for 2 to 3 minutes.
- Pour the water and cover the pot and let the rice cook for 10 to 15 minutes until the rice is cook. Mixing most of the time to avoid sticking of the rice at the bottom.
- Season with freshly ground black pepper.
- Serve hot in a bowl with your choice of toppings.
