Salmon Adobo

The fish adobo ("adobong isda") is a Filipino dish that is so easy to cook. My Nanay used to cooked adobong isda from the "catch of the day" of Tatay for our family in the Philippines. Now I'm cooking it for my husband and he likes it. A delicious and so flavourful salmon adobo. This one pan seafood recipe is a healthy meal. Salmon is a great source of protein and also a fatty fish that contain the most omega-3 fatty acids!


Serves: 2








Ingredients 
  • ¼ cup soy sauce
  • ¼ cup rice vinegar
  • 2 tablespoons brown sugar
  • 3 large cloves garlic
  • 1 tablespoon ginger, minced
  • ½ teaspoon peppercorn
  • 2 bay leaf
  • 2 thai chili, sliced
  • spring onion, sliced (for garnish) optional







To Serve: 
  • steamed rice
  • steamed, boiled or microwaved vegetable of your choice







Method
  1. In a mortar and pestle, crush the garlic and peppercorns. Set aside.
  2. In non-reactive deep pan, add the garlic, peopercorns, soy sauce, rice vinegar, bay leaf, chili and brown sugar and mix well. Place the salmon and marinate for at least 15 minutes.
  3. Cover the pan and over a medium high heat bring to a boil, then simmer for 15-20 minutes.
  4. Remove the cover of the pan and allow to boil for 5 to 10 minutes approx. Pour the sauce all over the salmon. Cook until the sauce is reduced enough.
  5. Serve warm!

  6. Especially in winter, seafoods are consumed more than the other times. We mostly consume anchovy and horse mackarel but salmon sounds really delicious. I would like to try it.
