Seafood Pancit Palabok (Filipino Noodles with Seafood in Thick Prawn Broth Sauce)

A delicious Filipino noodle dish with a rich prawn sauce topped with seafood, hard boiled eggs, crispy garlic and spring onion. It is a popular classic dish to serve for special occasions.



Serves: 2 to 3








Ingredients
  • 2 bundles Excellent Pancit Palabok noodles, 200 grams
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoons garlic, chopped
  • 1 piece medium onion, chopped
  • ¼ cup smoked salmon, roughly chopped
  • 500 grams cooked prawn, removed shells, deveined and clean
  • 200 grams squid tube, sliced 
  • salt and freshly ground black pepper to taste
  • 1 pack Mama Sita’s Palabok Mix (Oriental Gravy), 57 grams
  • 3 hard boiled eggs, peeled and sliced
  • 1 to 2 tablespoons crispy fried garlic
  • 4 pieces spring onion, thinly sliced







To Serve:
  • spring onion, thinly sliced
  • crispy fried garlic
  • calamansi or lemon, sliced







Method
  1. Cook the pancit palabok noodles as per package instructions. Set aside and keep warm.
  2. Dissolve thoroughly the palabok mix in the unsalted prawn broth according to package instructions. Set aside.
  3. Heat the oil in the deep pan over medium high heat and sauté the garlic and onion until soft. Add the squid and lightly fry. Season with salt and freshly ground black pepper.
  4.  Pour the prepared palabok mix in the pan with sautéed squid. Stir in the smoked salmon and cook until the thick consistency is achieved. Set aside and keep warm.
  5. In a serving platter put the  noodles. Then pour the sauce, and top with cooked prawn and sliced boiled egg. Sprinkle a crispy fried garlic. Lastly, garnish with spring onion.  It can be also divided into individual servings.
  6. Serve warm.
