Baked Scallop with Edam Cheese

A delicious baked scallops with edam cheese on our  New Year's day!





Serves: 2








Ingredients 
  • 7 half shell scallops
  • 30 grams salted butter
  • 1 large clove garlic, finely chopped
  • 2 tablespoons double cream
  • freshly ground black pepper to taste
  • 60 grams edam cheese, grated
  • 1 piece spring onion, sliced thinly for garnishing







To Serve: baguette 








Method
  1. Pre-heat oven to 200°C (fan forced).
  2. In a microwaveable small bowl, put the butter and microwave it for at least 30 seconds or until softened.
  3. Stir the butter. Then add garlic, cream and salt and pepper and mix well to combine. Set aside.
  4. Place the scallops in the lined baking tray. Set aside.
  5. Spoon the butter cream mixture evenly among the scallops and top with cheese.
  6. Bake scallops for 10 to 12 minutes or until the cheese is melted and slightly browned at the edges.
  7. Top with fresh spring onion before serving.
