Turkey Sopas

A Filipino style "turkey soup" is a delicious way to use leftover baked turkey! Comfort food during the holiday season.




Serves: 4








Ingredients
  • 400 grams leftover baked turkey👈, shredded and bones removed
  • 1 piece medium onion, chopped
  • 4 pieces hotdog, sliced
  • 2 pieces medium carrots, small strips
  • ¼ piece cabbage, sliced (optional)
  • 1 tin (340 ml) evaporated milk
  • 1 ½ cups macaroni pasta
  • 4 cloves garlic, chopped
  • 9 cups salt reduced turkey or chicken stock
  • 1 tablespoon butter
  • salt and freshly ground black pepper to taste








To Serve:
  • hard boiled egg
  • soft bread roll







Method
  1. Heat a large deep pot in medium heat, then add the butter.
  2. Sauté the garlic and onions until soft.
  3. Pour the chicken stock and let it boil.
  4. While the stock is boiling, add the macaroni pasta, shredded chicken, sliced hotdogs and carrots. Stir and and boil. Let the pasta cook for at least 20 minutes, approximately.
  5. Add the cabbage. Stir and cook for 5 minutes.
  6. Pour the evaporated milk. Stir and let it boil for another 3 minutes.
  7. Have a taste test. Season with salt and freshly ground black pepper to taste. Add salt if needed.
  8. Transfer to a serving bowl.
  9. Serve hot!

Note: Leftover baked turkey bones can be used in making stock.
