Turkey Pesto Pasta

This delicious turkey pesto recipe is a quick and easy way to use up leftover baked turkey!





Serves: 2








Ingredients
  • 100 grams homemade or store bought  basil pesto
  • 200 grams fettuccine
  • 1 cup leftover baked turkey👈, sliced or shredded
  • salt and freshly ground pepper to taste
  • parmesan , shredded (for topping)







Method
  1. Cook the pasta in a large saucepan according to packet directions. 
  2. Drain, reserving ⅛ cup cooking water.
  3. Return quickly the pasta to sauce pan.
  4. Add pesto and reserved water and toss to combine. 
  5. Stir in gently the shredded or sliced turkey and season with salt and freshly ground pepper to taste.
  6. Top each serving with shredded parmesan.
  7. Serve warm!
