Turkey Pesto Pasta
This delicious turkey pesto recipe is a quick and easy way to use up leftover baked turkey!
Serves: 2
Ingredients
- 100 grams homemade or store bought basil pesto
- 200 grams fettuccine
- 1 cup leftover baked turkey👈, sliced or shredded
- salt and freshly ground pepper to taste
- parmesan , shredded (for topping)
Method
- Cook the pasta in a large saucepan according to packet directions.
- Drain, reserving ⅛ cup cooking water.
- Return quickly the pasta to sauce pan.
- Add pesto and reserved water and toss to combine.
- Stir in gently the shredded or sliced turkey and season with salt and freshly ground pepper to taste.
- Top each serving with shredded parmesan.
- Serve warm!
