Salmon sa Tausi (Salmon in Black Bean Sauce)

My Nanay love to cook "isda sa tausi" usually using milkfish for our family in the Philippines. She shared her own recipe to me! I used salmon fillet and  black bean sauce in this recipe!






Serves: 2








Ingredients


Bake Salmon
  • 2 pieces fresh salmon fillet, 0.452 grams
  • 2 tablespoons extra virgin olive oil
  • salt and freshly ground pepper to taste

For the Sauce
  • 2 tablespoon extra virgin olive oil
  • 1 medium red onion, chopped
  • ½ tablesppon ginger, minced
  • 3 large cloves of garlic, minced
  • 2 tablespoons black bean garlic sauce
  • 1 cup water
  • 1 tablespoon white sugar
  • salt and pepper to taste







To Serve:
  • steamed rice
  • baked asparagus








Method
  1. Pre-heat oven to 180°C (160°C fan forced).
  2. Place salmon on a lined baking tray in the middle of oven.
  3. Brush the salmon portions with olive oil and season with salt and pepper.
  4. Place into oven and bake salmon for 15 to 20 minutes or to your liking.
  5. Meanwhile, saute onion, ginger and garlic until soft and aromatic.
  6. Add the black bean sauce. Stir and cook for few minutes.
  7. Pour the water and add the sugar. Let it boil and simmer over medium low heat for about 5-10 minutes or until the sauce is reduced. Season with salt and freshly ground pepper.
  8. Add the baked salmon fillet to the sauce and simmer over low heat for about 2 minutes.
  9. Serve warm!

  1. I seldom buy salmon because hubby doesn't like salmon. No problem because I can substitute it with other fish. Pretty white flowers.
