Prawn Fusilli in Feta and Tomato Sauce with Moscato Wine

A flavourful simple prawn fusilli in feta and tomato sauce with moscato wine! It's like prawn saganaki but with pasta.



Serves: 2








Ingredients

  • 200 grams fusilli pasta
  • 2 tablespoons olive oil
  • 1 tablespoon red onion, finely chopped
  • 20 pieces (500g) Australian green king prawn, peeled, deveined, tailed intact
  • 3 garlic cloves, finely chopped
  • 1 can, 210 grams finely chopped tomatoes
  • ½ cup water
  • 80 ml moscato
  • ½ teaspoon dried oregano
  • 1 teaspoon sugar
  • ½ cup feta cheese cubes






To Serve: 

  • feta cheese
  • chopped parsely for garnish
  • crusty bread







Method
  1. In a large pot, boil the water and cook the pasta according to packet directions.
  2. Meanwhile, heat olive oil in a large pan over medium-high heat. Sauté garlic and onion until soft.
  3. Add the prawns and cook for at least 2 minutes. Set aside.
  4. In the same pan over medium high heat add 1 can of finely chopped tomatoes and water. Sprinkle the oregano. Add sugar and season with salt and freshly ground black pepper. Stir well.
  5. Then, pour wine and bring to boil. Simmer, uncovered for 5 minutes approx. or until sauce is reduced. 
  6. Add the prawn mixture and feta in the sauce over low heat.
  7. Toss the pasta in the sauce with cooked prawn until well combine or place the cooked pasta in individual plates and top with the sauce and cooked prawn.
  8. Garnish with chopped fresh parsley if you like.
  9. Serve warm!

Jesus Changes Water Into Wine

On the third day a wedding took place at Cana in Galilee. Jesus’ mother was there, and Jesus and his disciples had also been invited to the wedding.  When the wine was gone, Jesus’ mother said to him, “They have no more wine.”

“Woman, why do you involve me?” Jesus replied. “My hour has not yet come.”

His mother said to the servants, “Do whatever he tells you.”

Nearby stood six stone water jars, the kind used by the Jews for ceremonial washing, each holding from twenty to thirty gallons.

Jesus said to the servants, “Fill the jars with water”; so they filled them to the brim.

Then he told them, “Now draw some out and take it to the master of the banquet.”

They did so, and the master of the banquet tasted the water that had been turned into wine. He did not realize where it had come from, though the servants who had drawn the water knew. Then he called the bridegroom aside and said, “Everyone brings out the choice wine first and then the cheaper wine after the guests have had too much to drink; but you have saved the best till now.”

What Jesus did here in Cana of Galilee was the first of the signs through which he revealed his glory; and his disciples believed in him.

    1. Thank you 😃. So easy recipe. Simply delicious 😁. We usually buy wine 🍷 for cooking.  In this dish 🍝 I used moscato 🍷it generally has lower acidity, with a slight sweetness according to what I read 😉.
