Tinolang Manok (Ginger Chicken Soup with Choko)
A hearty Filipino chicken soup perfect for rainy days!
Serves: 2
Ingredients
- 500 grams Australian chicken maryland, 2 pieces
- 1 piece medium size "sayote" or choko (peeled, removed seed and wedged)
- 2 tablespoons extra virgin olive oil
- 3 large cloves garlic, chopped
- 1 large red onion, chopped
- 2 tablespoons sliced ginger, thin strips
- 2 tablespoons fish sauce
- 1 tablespoon ginger paste
- 4 cups salt reduced chicken stock
- 120 grams fresh spinach
- salt and freshly ground black pepper to taste
To Serve: steamed rice
Method
- In a soup pot, heat oil over medium high heat.
- Sauté garlic, onion, and ginger.
- Add the chicken and cook, stir for 3 minutes or until light brown.
- Stir in the ginger paste and fish sauce.
- Add the chicken broth and "sayote" or choko.
- Cover and simmer for 40 minutes.
- Season with salt and pepper to taste.
- Lastly, stir in the spinach and cover for few minutes and remove heat.
- Serve hot.
