Teriyaki Salmon

Teriyaki is a cooking technique used in Japanese cuisine in which seafood like yellowtail, marlin, skipjack tuna, salmon, trout, and mackerel are broiled or grilled with a glaze of soy sauce, sake, mirin, and sugar.


Serves: 2







Ingredients
  • 520 grams, 2 pieces salmon fillet, skin on
  • 2 tablespoons extra virgin olive oil

For the Marinade 
  • ⅛ cup soy sauce
  • ⅛ cup Japanese sake
  • ⅛ cup mirin 
  • ½ tablespoon white sugar
  • ½ teaspoon ginger, grated






To Serve:
  • steamed rice, sprinkled with Furikake mix seasoning 
  • mixed vegetables carrots, peas and corn, boiled or microwaved
  • vegetables of your choice






Method
  1. In a small bowl combine soy sauce, sake, mirin, sugar and ginger. And mix until well combined.
  2. Marinate the salmon for at least 20 minutes. Set aside.
  3. Meanwhile, pre-heat oven to 180°C (160°C fan forced).
  4. Place the marinated salmon on a lined baking tray in the middle of oven.
  5. Place into oven and bake salmon for 10 to 15 minutes.
  6. Meanwhile, place the excess marinade in small sauce pan and boil until thick consistency. 
  7. Pour the cooked marinade in the baked salmon. Then, oven grill for at least 5 minutes approximately.
  8. Serve warm!
