Speedy Hokkien Noodles with Broccolini and Bok Choy Stir-Fry
Easy one pan noodle recipe with nutritious vegetables!
Serves: 3
Ingredients
- 450 grams Fresh Noodles Hokkien, thin
- 1 bunch broccolini
- 2 cups bok choy, sliced
- 1 cup capsicum, sliced into strips
- 2 large cloves garlic, chopped
- 1 tablespoon ginger, finely chopped
- 1 small onion, chopped
- 3 teaspoons soy sauce
- 3 teaspoons Maggi Original Seasoning (optional)
- ½ cup salt reduced vegetable or chicken stock
- salt and freshly ground pepper to taste or ½ teaspoon Japanese style chili seasoning (optional)
Method
- Prepare the Hokkien noodles according to package instructions.
- In the medium deep pan, heat the oil over medium-high heat, then sauté the garlic, onion and ginger until soft and fragrant.
- Add the capsicum, broccolini and bok choy and stir fry for at least 3 minutes.
- Pour the broth, soy sauce and Maggi Original Seasoning, if using. Let it boil for a minute.
- Lastly, add the prepared noodles and mix gently until the sauce is reduced.
- Season with salt and pepper or Japanese style chili seasoning.
- Serve warm!
