Speedy Hokkien Noodles with Broccolini and Bok Choy Stir-Fry

Easy one pan noodle recipe with nutritious vegetables!







Serves: 3








Ingredients
  • 450 grams Fresh Noodles Hokkien, thin 
  • 1 bunch broccolini
  • 2 cups bok choy, sliced
  • 1 cup capsicum, sliced into strips
  • 2 large cloves garlic, chopped
  • 1 tablespoon ginger, finely chopped
  • 1 small onion, chopped 
  • 3 teaspoons soy sauce
  • 3 teaspoons Maggi Original  Seasoning (optional)
  • ½ cup salt reduced vegetable or chicken stock
  • salt and freshly ground pepper to taste or ½ teaspoon Japanese style chili seasoning (optional)







Method
  1. Prepare the Hokkien noodles according to package instructions.
  2. In the medium deep pan, heat the oil over medium-high heat, then sauté the garlic, onion and ginger until soft and fragrant.
  3. Add the capsicum, broccolini and bok choy and stir fry for at least 3 minutes. 
  4. Pour the broth, soy sauce and Maggi Original Seasoning, if using. Let it boil for a minute.  
  5. Lastly, add the prepared noodles and mix gently until the sauce is reduced.
  6. Season with salt and pepper or Japanese style chili seasoning.
  7. Serve warm!
