Pansit Palabok (Filipino Noodles with Thick Prawn Broth Sauce)

Pancit palabok is a noodles with thick prawn broth sauce.  This is one of the favorite "merienda" of  Filipinos!


Serves: 2 to 3







Ingredients
  • 2 bundles Excellent Pancit Palabok noodles, 200 grams
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoons garlic, chopped 
  • 1 piece medium onion, chopped 
  • ¼ cup smoked trout or tinapa
  • 330 grams pork shoulder, sliced 
  • 300 grams, (9 pieces) cooked prawn, removed shells, deveined and clean
  • salt and freshly ground black pepper to taste
  • 1 pack Mama Sita’s Palabok Mix (Oriental Gravy), 57 grams
  • 3 hard boiled eggs, peeled and sliced
  • 40 grams pork crackling, crushed
  • 1 to 2 tablespoons crispy fried garlic
  • 4 pieces spring onion, thinly sliced






To Serve: 
  • cooked prawns, shells removed 
  • cooked squid, sliced 
  • tinapa flakes
  • pork crackling, crushed
  • spring onion
  • crispy fried garlic
  • calamansi or lemon, sliced






Method
  1. Cook the pancit palabok noodles as per package instructions. Set aside and keep warm.
  2. Lightly season the pork with salt and pepper. Heat the oil in the pan and fry the pork until light brown. Set aside and keep warm.
  3. Remove the excess oil if needed. In the same pan sauté the garlic and onion until soft. Add the smoked trout flakes and lightly fry.
  4. Dissolve thoroughly the palabok mix in the unsalted prawn broth according to package instructions. Then pour it in the pan with sauteed smoked trout and cook until the thick consistency is achieved. Set aside and keep warm.
  5. In a serving platter put the  noodles. Then pour the sauce, and top with fried pork, sliced boiled egg, cooked prawn and pork crackling. Sprinkle a crispy fried garlic. Lastly, garnish with spring onion.  It can be also divided into individual servings.
  6. Serve warm.
