Japanese Sake-Soy Salmon
A tender and juicy baked salmon fillet with a bit of sweetness in Japanese sake and soy sauce glaze!

Ingredients
- 514 grams salmon fillet, 2 pieces skin on
- 1 bunch asparagus, trimmed
- 2 tablespoons extra virgin olive oil
- salt and freshly ground pepper to taste
- 40 ml Japanese sake
- 1 tablespoon soy sauce
- 1 teaspoon white sugar
- ½ teaspoon fresh ginger, finely grated
- 1 teaspoon sesame oil
- furikake seasoning, optional
To Serve:
- steamed rice
- furikake seasoning, for sprinkling on top of steamed rice (optional)
- baked asparagus
- steamed, boiled, bake or roast vegetables of your choice
- Pre-heat oven to 180°C (160°C fan forced).
- Place salmon and asparagus on the same lined baking tray in the middle of oven.
- Brush the salmon portions and and asparagus with olive oil and season with salt and pepper.
- Place into oven and bake salmon for 15 to 20 minutes or to your liking. Keep warm and set aside.
- Meanwhile, in a small bowl combine sake, soy sauce, sugar, ginger and seasme oil. And mix well together.
- Pour in the small sauce pan and bring to a boil and cook in medium high heat to dissolve the sugar. Stir for approximately 2 minutes or until slightly thickened.
- Serve the baked salmon and asparagus into individual serving plate.
- Drizzle the sake-soy glaze over the baked salmon.
- Serve with steamed rice and a sprinkle of furikake seasoning on top.
- Serve warm!
