Japanese Sake-Soy Salmon

A tender and juicy baked salmon fillet with a bit of sweetness in Japanese sake and soy sauce glaze!







Serves: 2








Ingredients 
  • 514 grams salmon fillet, 2 pieces skin on
  • 1 bunch asparagus, trimmed
  • 2 tablespoons extra virgin olive oil
  • salt and freshly ground pepper to taste
  • 40 ml Japanese sake
  • 1 tablespoon soy sauce 
  • 1 teaspoon white sugar 
  • ½ teaspoon fresh ginger, finely grated
  • 1 teaspoon sesame oil
  • furikake seasoning, optional







To Serve:
  • steamed rice 
  • furikake seasoning, for sprinkling on top of steamed rice (optional) 
  • baked asparagus
  • steamed, boiled, bake or roast vegetables of your choice








Method
  1. Pre-heat oven to 180°C (160°C fan forced).
  2. Place salmon and asparagus on the same lined baking tray in the middle of oven.
  3. Brush the salmon portions and and asparagus with olive oil and season with salt and pepper.
  4. Place into oven and bake salmon for 15 to 20 minutes or to your liking. Keep warm and set aside.
  5. Meanwhile, in a small bowl combine sake, soy sauce, sugar, ginger and seasme oil.  And mix well together.
  6. Pour in the small sauce pan and bring to a boil and cook in medium high heat to dissolve the sugar.  Stir for approximately 2 minutes or until slightly thickened.
  7. Serve the baked salmon and asparagus into individual serving plate.
  8. Drizzle the sake-soy glaze over the baked salmon.
  9. Serve with steamed rice and a sprinkle of furikake seasoning on top.
  10. Serve warm!
