Cajun Salmon with Asparagus
The cajun salmon with asparagus is the easiest dinner to serve after work. Simply delicious!

Serves: 2
- 520 grams, 2 pieces salmon fillet, skin on
- 2 tablespoons extra virgin olive oil
- ½ lemon, thinly sliced
- 2 teaspoon cajun seasoning mix or to taste
For the baked asparagus
- 2 bunches fresh asparagus, trimmed
- 1 tablespoon extra virgin olive oil
- salt and pepper to taste
Method
- Pre-heat oven to 180°C (160°C fan forced).
- In a small bowl combine together olive oil and cajun seasoning. Mix well and set aside.
- Place the salmon, skin side down on a lined baking tray and pour the cajun seasoning mixture all over the fish. Then, put 2 to 3 thin slices of lemon on the top of each fillet. Set aside.
- Meanwhile, in another lined baking tray place the asparagus, drizzle with olive oil and season with salt and pepper.
- Place the salmon and asparagus into oven and bake for 15 to 20 minutes or to your liking.
- Serve warm!
