Cajun Salmon with Asparagus

The cajun salmon with asparagus is the easiest dinner to serve after work. Simply delicious!


Serves: 2








Ingredients
  • 520 grams, 2 pieces salmon fillet, skin on
  • 2 tablespoons extra virgin olive oil
  • ½ lemon, thinly sliced 
  • 2 teaspoon cajun seasoning mix or to taste


For the baked asparagus
  • 2 bunches fresh asparagus, trimmed
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste








Method
  1. Pre-heat oven to 180°C (160°C fan forced). 
  2. In a small bowl combine together olive oil and cajun seasoning. Mix well and set aside.
  3. Place the salmon, skin side down on a lined baking tray and pour the cajun seasoning mixture all over the fish. Then, put 2 to 3 thin slices of lemon on the top of each fillet. Set aside.
  4. Meanwhile, in another lined baking tray place the asparagus, drizzle with olive oil and season with salt and pepper.
  5. Place the salmon and asparagus into oven and bake for 15 to 20 minutes or to your liking. 
  6. Serve warm!
