Greek Style Marinated Pork Rashers
Simply delicious Greek style marinated pork rashers. A dish that is great for sharing!
- 500 grams Australian Pork Rashers
- extra virgin olive oil for frying
Marinade
- 1/3 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- 3 teaspoon dried oregano
- 1 tablesppon fresh rosemary leaves
- 4 garlic cloves, peeled
- 1½ teaspoon salt
- 1 teaspoon freshly ground black pepper
To Serve:
- a green leafy salad
- a side dish of your choice
Method
- Combine together all the marinade ingredients in the food processor. Process until smooth.
- Pour the marinade all over the pork rashers.
- Marinate the pork rashers for at least 30 minutes up to 24 hours with cover in the fridge.
- Heat the oil in the frying pan in medium high heat.
- Pan fry the pork rashers for 5-6 minutes per side until golden brown or until cooked through. Fry also the fat side to render the fat for crispiness for about 2 to 3 minutes approximately.
- Remove the cooked pork rashers from the pan.
- Let the meat rest for 5 minutes.
- Serve warm!
Note: Let the pork rashers to come to room temperature before cooking.
