Greek Style Marinated Pork Rashers

Simply delicious Greek style marinated pork rashers.  A dish that is great for sharing!



Serves:
4






Ingredients

  • 500 grams Australian Pork Rashers
  • extra virgin olive oil for frying
     
     Marinade
  • 1/3 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 3 teaspoon dried oregano
  • 1 tablesppon fresh rosemary leaves
  • 4 garlic cloves, peeled
  • 1½ teaspoon salt
  • 1 teaspoon freshly ground black pepper






To Serve: 


  • a green leafy salad
  • a side dish of your choice







Method

  1. Combine together all the marinade ingredients in the food processor. Process until smooth.   
  2. Pour the marinade all over the pork rashers. 
  3. Marinate the pork rashers for at least 30 minutes up to 24 hours with cover in the fridge.
  4. Heat the oil in the frying pan in medium high heat. 
  5. Pan fry the pork rashers for 5-6 minutes per side until golden brown or until cooked through. Fry also the fat side to render the fat for crispiness for about 2 to 3 minutes approximately.
  6. Remove the cooked pork rashers from the pan.
  7. Let the meat rest for 5 minutes.
  8. Serve warm!


 Note: Let the pork rashers to come to room temperature before cooking.
