Jumbo Banana Strawberry Muffin

A grab and go breakfast banana strawberry muffins that is delightfully moist!

  • 12 Cups Non-Stick Muffin Tray (39cm x 28.7cm x 3.5cm) 
  • wire rack for cooling
  • storage container for muffins








Ingredients

  • 4 cups self raising-flour, sifted
  • 1 cup caster sugar
  • 2 teaspoon ground cinnamon
  • ½ cup fresh milk
  • 250 grams unsalted butter, melted and cooled
  • 4 pieces medium size egg
  • 2 cups mashed banana or 3 pieces  large size over riped banana
  • 2 teaspoons vanilla extract
  • 250 grams (1 punnet) fresh strawberry, hulled and chopped
  • butter for greasing
  • icing sugar for dusting








Method

  1. Preheat oven to 170°C (fan forced).
  2. Place the prepared tulip muffin cups into muffin tray and grease with butter.    (👉 How to make your own tulip-shaped muffin liners.)
  3. In a bowl combine flour, caster sugar  and cinnamon and mix together.
  4. Add milk, butter, eggs and vanilla to flour mixture.
  5. Stir, gently to combine then add banana.
  6. Stir in gently the blue berry.
  7. Spoon mixture into prepared muffin pan.
  8. Bake for 30 to 40 minutes or until a skewer inserted comes out clean.
  9. Leave the muffin on the pan for at least 5 minutes before transferring to rack for cooling.
  10. Lightly dust with icing sugar if desired.
  11. Serve!




Note: Micowave 1 piece muffin for 20 seconds on high, if you like it warm.
