Homemade Skinless Beef Longganisa


Longganisa are usually fresh or smoked sausages, consisting of lean meat and fat, along with garlic, black pepper, salt, saltpetermuscovado or brown sugar, and vinegar. A longganisa can either be sweet or garlicky and usually made with pork. Homemade sausages can be simple without the casing, known as longganisang hubad or "skinless longganisa".


Makes: 10 pieces (approx.)








Ingredients

  • 541 grams kilogram Australian beef mince, 82% meat and 18% fat in chilled temperature
  • 3 tablespoons brown sugar 
  • ½ tablespoon iodised salt
  • 1½ tablespoon soy sauce
  • 1½ tablespoon rice vinegar
  • ½ to 1 tablespoon paprika
  • 8 cloves garlic, crushed
  • 1/2 teaspoon freshly ground black pepper
  • oil, for frying



To Serve:


  • spring onion for garnish
  • crispy garlic
  • 👉 Garlic Fried Rice or steamed rice
  • 👉Sunny Side Up Fried Eggs
  • atchara or pickled papaya strips
  • fresh tomatoes, sliced
  • fresh cucumber, sliced
  • spiced vinegar for dipping sauce












Method

  1. In a large bowl, combine the beef mince, brown sugar, salt, soy sauce, onion, garlic and freshly ground black pepper. Mix it well.
  2. Spoon about ¼ cup of the beef mixture and shape it into a rough log (approx. 8.5 cm long).  
  3. Chill overnight or until ready to cook.
  4. For frying, heat enough oil to cover the bottom of a nonstick frying pan and place over medium heat.
  5. Fry until completely browned on all sides and cooked well. 
  6. Served hot.
