Simple Quick Pancit Palabok
A simple quick pancit palabok is so easy to make! I only used the ingredients available in our pantry. The pancit palabok noodle and the palabok oriental gravy mix that we bought in the Filipino shop before the lockdown. Simply delicious!

Ingredients
- 2 bundles Excellent Pancit Palabok, 200 grams
- 2 tablespoons extra virgin olive oil.
- 250 grams pork shoulder, sliced into bite size
- 1 pack Mama Sita’s Palabok Mix (Oriental Gravy), 57 grams
- 1 tablespoons garlic, chopped
- 4 hardboiled eggs, peeled and sliced
To Serve:
- cooked prawns, shells removed
- cooked squid, sliced
- tinapa flakes
- pork crackling, crushed
- spring onion
- crispy fried garlic
- calamansi and lemon, sliced
Note: The toppings if available.
Method
- Cook the pancit palbok noodles as per package instructions. Set aside and keep warm.
- Heat the oil in the pan and fry the pork until brown. Remove the excess oil if there's any. Stir in garlic and cook for a minute. Set aside and keep warm.
- Cook the palabok sauce as per package instructions. Set aside and keep warm.
- In a serving platter put the rice noodles. Then pour the sauce, and top with fried pork and sliced boiled egg. It can be also divided into individual servings.
- Serve warm.
