Pistachio Biscuits

Easy tea time biscuits recipe! The pistachio is a member of the cashew family, a small tree originating from Central Asia and the Middle East. The tree produces seeds that are widely consumed as food. 👉 Though its a seeds, this were considered nuts in culinary settings and classified as a tree nut allergen.

I just used the leftover pistachio nuts that we still have in our pantry. I hope and pray you are all keeping yourselves safe and healthy through this challenging time during lockdown!

Ingredients


  • ⅔ cup pistachio nuts
  • 185 grams butter, softened
  • 75 grams white sugar 
  • 2 ¼ cups plain flour, sifted 
  • 2 tablespoons fresh milk
  • 2 tablespoons golden syrup
  • 1.5 teaspoons Bicarbonate Soda





Method


  1. Preheat oven to 180°C (fan forced).
  2. Grind the pistachio in the food processor but not very fine texture.
  3. Prepare a baking tray with a non stick baking paper and set aside.
  4. In a bowl cream the softened butter and sugar well.
  5. Add the flour and stir well until fully combined together.
  6. In a small sauce pan add the milk and golden syrup in a low heat for a minute and stir well.  Then add the baking soda. The mixture will rapidly rise and bubble as you mix. Combine the mixture thoroughly.
  7. Pour the liquid mixture into the mixing bowl with the mixed flour, butter and sugar and mix it well. 
  8. Stir in the pistachio nuts.
  9. Scoop ⅛ cup sized amounts of dough and roll into balls, placing 2 cm apart on the prepared tray.
  10. Lightly press the dough balls with a fork.
  11. Bake for 13 minutes until lightly golden brown.
  12. Allow to cool for 5 minutes on the tray before transferring to a wire rack to cool completely.
  13. Store in an airtight container.
