Stir-Fried Ramen Noodles with Vegetables

- 180 grams Hakubake Organic Ramen , 2 bundles
- 2 tablespoons extra virgin olive oil
- 1 tablespoon ginger, peeled and finely chopped
- 3 cloves of garlic, finely chopped
- 1 piece medium, onion chopped
- 2 pieces medium carrots, peeled and julienned
- 2 cups cauliflower, cut into florets
- 1 cup cabbage, sliced
- 12 pieces green beans, sliced
- 1 to 2 cups water or low sodium broth such as vegetable, prawn, chicken or beef
- freshly ground pepper to taste
Stir Fry Sauce
- 3 tablespoons water
- 2 to 3 tablespoons soy sauce
- 1 tablespoon white sugar
- 2 teaspoons cornflour
Method
- Cook the ramen noodles as per package instructions. Rinse with cold water. Set aside.
- Combine all the ingredients of the stir fry sauce and mix well. Set aside.
- Heat the oil in a large pan over medium-high heat. Sauté the ginger, garlic, and onion until soft.
- Stir fry the carrots, cauliflower, cabbage and green beans for few minutes. Then add the water or low sodium broth and let it boil for 5 minutes (approximately).
- Add the noodles to the pan and pour in the sauce. Stir gently until the sauce is thick. Coat the noodles and vegetables with the thickened sauce.
- Season with freshly ground pepper.
- Serve warm!
