- citrus juicer

- fork for beating eggs

Ingredients
- 1 cup self raising flour, sifted
- ⅛ cup cornflour, sifted
- 50 grams butter, softened
- 85 grams sugar
- 1 large egg, lightly beaten
- 1 piece fresh navel orange (191 grams), zest and 80 ml juice with pulp
- 2 tablespoons fresh milk
- 1 tablespoon caster sugar for sprinkling
- oil for greasing
Method
- Preheat oven 180°C (fan forced).
- Grease a 20 cm round cake tin and line with non-stick baking paper in the base.
- Cream butter and sugar. Then add the egg and beat well.
- Add zest and orange juice with pulp. Mixture will curdle.
- Sift and stir in the dry ingredients and mix well.
- Pour the batter into prepared tin and sprinkle with caster sugar.
- Bake for 30 minutes until a skewer inserted comes out clean.
- Transfer the teacake in the wire rack.
- Serve warm!
