Quick Tofu Stir-fry with Udon Noodles
Udon are soft and thick noodles made from wheat flour while tofu is nutritionally low in calories, while containing a huge amount of protein.
Easy Japanese style comfort food recipe with lots of vegetables!
Serves: 2 to 3
Ingredients
- 184 grams Hakubaku Organic Udon Noodles , 2 bundles
- 2 cups Macro Firm Tofu, diced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon ginger, peeled and finely chopped
- 3 cloves of garlic, finely chopped
- 1 piece medium, onion chopped
- 2 cups cabbage, sliced
- 2 pieces medium carrots, peeled and long shredded
- 12 pieces green beans, sliced
- 1 cup water or low sodium vegetable broth, (or prawn, chicken or beef for non vegetarian)
- freshly ground pepper to taste
Stir Fry Sauce
- 3 tablespoons water
- 2 to 3 tablespoons soy sauce
- 1 tablespoon white sugar
- 2 teaspoons cornflour
Method
- Cook the udon noodles as per package instructions. Rinse with cold water. Set aside.
- Combine all the ingredients of the stir fry sauce and mix well. Set aside.
- Heat the oil in a large pan over medium-high heat. Fry the tofu until light brown. Set aside.
- In the same pan sauté the ginger, garlic, and onion until soft.
- Stir fry the cabbage, green beans for few minutes.
- Toss the long shredded carrots.Then add the water or low sodium broth and let it boil for 5 minutes (approximately).
- Add the noodles to the pan and pour in the sauce. Stir gently until the sauce is thick.
- Add the fried tofu.
- Coat the noodles,vegetables and tofu with the thickened sauce.
- Season with freshly ground pepper.
- Remove the pan in the heat.
- Serve warm!
