Portugese Style Sardines - Scrambled Egg
The oily fish such as sardines are a great source of omega-3 fatty acids. In this recipe I used tinned Portugese style sardines which is highly nutritious and economical!

Ingredients
- 1 tin 120 grams Sole Mare - Portugese Style Sardines in Tomato Sauce
- 3 pieces large egg
- 1 piece small medium onion, chopped
- 2 tablespoons of extra virgin olive oil
- freshly ground black pepper to taste
- Spring onion, chopped (optional)
Method
- Whisk the eggs and season with freshly ground black pepper.
- Heat the oil in the frying pan over medium high heat.
- Saute the onion until soft.
- Add the whole sardines with the tomato sauce. Gently mash the sardines.
- Then, pour the egg mixture into the pan and cook on medium low heat.
- Gently stirring the eggs and sardines until the eggs is no longer runny or it is fully cooked.
- Garnish with spring onion.
- Serve warm!
