Portugese Style Sardines - Scrambled Egg

The oily fish such as sardines are a great source of omega-3 fatty acids.  In this recipe I used tinned Portugese style sardines which is highly nutritious and economical!

Ingredients




Method

  1. Whisk the eggs and season with freshly ground black pepper.
  2. Heat the oil in the frying pan over medium high heat.
  3. Saute the onion until soft.
  4. Add the whole sardines with the tomato sauce. Gently mash the sardines.
  5. Then, pour the egg mixture into the pan and cook on medium low heat.
  6. Gently stirring the eggs and sardines until the eggs is no longer runny or it is fully cooked.
  7. Garnish with spring onion.
  8. Serve warm!
