One Pot Pork Ribs Afritada

Afritada is a Philippine dish with pork, chicken or beef braised in tomato sauce with carrots, potatoes, and red and green capsicum. It is usually served with steamed white rice. A common everyday Filipino meal nowadays!

I used pork ribs to cooked a one pot afritada meal.  It is best for lunch or dinner!

The basic ingredients in this recipe are most probably already have in your house. It is a meal that you need when you can't get to the shops during lockdown!

Plan your meals around foods that are in season and also on special or sale. Try to look into your pantry, refrigerator and freezer. And check carefully the expiry date of the food ingredients you already have on hand. In this way you can cooked a meal without breaking your food budget!

If you can plant and propagate your own herbs in your garden, much better!




Serves: 3




Ingredients

  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, chopped
  • 1 piece onion, chopped
  • 500 grams pork ribs, one bone each sliced
  • 4 pieces small salad white potatoes, peeled and sliced into half or quarter
  • 3 pieces medium carrot, chunked
  • 1 tablespoon tomato paste
  • 1 cup Fountain Tomato Sauce
  • 2 cups Beef Stock Pot, disolved in 2 cups boiling water
  • 1 cup water
  • 1 piece medium red capsicum, deseeded and sliced into strips
  • 4 piece fresh bay leaves
  • 1 cup green stuff olives (Spanish green olives with pimiento peppers)
  • 1 cup frozen green peas
  • 1 teaspoon freshly ground black pepper
  • salt to taste



To Serve: steamed rice




Method

  1. Slice your pork ribs. Run your knife lengthwise between the bones (one bone per sliced). Set aside.
  2. Heat the oil in a deep pot.
  3. Sauté the garlic and onion until soft.
  4. Add the sliced pork ribs, then sauté until it is light brown on all sides.
  5. Add tomato paste and tomato sauce then, stir in for 1 minute.
  6. Add the potatoes, carrots and bay leaves, then stir in for 1 minute.
  7. Pour the beef stock and water. Let it boil, then reduce the heat. Cover and simmer until the pork is tender (around 30 to 40 minutes, approximately) and the root vegetables are fully cooked.
  8. Lastly, stir in the green peas, green stuffed olives and red capsicum. Let it cook for 3 to 5 minutes (approximately). Season with freshly ground pepper and salt to taste.
  9. Remove heat and serve warm!
