Korean Style Gochujang Marinated Forequarter Lamb Chop

Gochujang or red chili paste is a savory, sweet, and spicy fermented condiment popular in Korean cooking. The ingredients are gochu-garu (chili powder), glutinous rice, meju (fermented soybean) powder, yeotgireum (barley malt powder) and salt. It is used to prepare Bibimbap (Korean mixed rice), Korean hot pot /stew, Korean rice cake (Tteokbokki), marinated meat dishes and many more.

Ingredients

  • 424 grams Australian Forequarter Lamb Chop, 3 pieces
  • 1 teaspoon sesame oil
  • ⅛ cup Ottogi Gochujang (Korean chili paste)
  • ⅛ cup sugar
  • 2 teaspoons soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons water
  • ½ teaspoon honey
  • 1 piece thumb size ginger, peeled
  • 1 clove garlic
  • 2 tablespoons canola oil for pan grill



Method

  1. Place the gochujang, sugar, soy sauce, rice vinegar, sesame oil, water, honey, ginger and garlic in the food processor and process until smooth.
  2. Place the forequarter lamb chops in the container, then pour the marinade over the meat. Marinate the meat for overnight or at least 30 minutes in the fridge with cover.
  3. Pan sear the drained forequarter lamb chops on the heated grill pan with canola oil for about 10 minutes until the meat is slightly brown  (Note: Brush occasionally  with marinade during pan searing.)
  4. Transfer the forequarter lamb chops in the baking tray, then grill in the oven for about 10 minutes (approx.) or until the golden brown color achieved. (Note: Brush occasionally with marinade during oven grilling.)
  5. Serve with steamed rice!


Notes: 
  • For even coat of the marinade turn the meat every 30 minutes.
  • When removing the meat from the oven, close the oven door while basting. Remove your meat and place it on the top of the stove or a countertop, close the oven door, baste, and then put the meat back in the oven. It is important to baste quickly.
