Ginisang Kalabasa with Bagoong Alamang (Sautéed Pumpkin with Shrimp Paste)
Bagoong Alamang or shrimp paste is a traditional Filipino condiment that is made of fermented shrimp. It is essential ingredient because it gives a umami flavor! In this recipe I used butternut pumpkin with sweet and nutty taste.

Serves: 3
- 456 grams butternut pumpkin, peeled, deseeded and chunked
- 2 tablespoons extra virgin olive oil
- 1 piece medium onion, chopped
- 3 cloves garlic, chopped
- 1 to 2 tablespoons Barrio Fiesta Bagoong – Sweet or sweet sautéed shrimp paste
- 2 to 3 cups water
- 1 teaspoon chili flakes
To Serve: steamed rice
Method
- Heat the oil in the large sauce pan over medium high.
- Sauté garlic and onion until soft.
- Stir in bagoong alamang or sweet sautéed shrimp paste.
- Add the pumpkin and stir. Then cover with water.
- Let it boil and simmer uncovered for at least 30 minutes. Cook the pumpkin until it is tender and the liquid is fully reduced. Stir gently until well coated by the sauce.
- Serve warm!
