Banana Nut Fruit Cake

A moist and delicious banana cake with walnuts and dried fruits!

Ingredients

  •  85 grams sugar
  • 125 grams butter, softened
  • 1 teaspoon vanilla
  • 2 pieces large eggs
  • 2 pieces large banana or 1 cup mashed banana (308 grams, approx.)
  • 1½ cups self raising flour, sifted
  • 1 teaspoon bicarbonate of soda
  • 50 to 60 ml fresh milk
  • ½ cup walnuts, chopped
  • ⅔ cup Mixed Fruit (sultanas, raisins, currants and citrus peel)
  • oil or butter for greasing


To Serve: frosting or icing of your choice (optional)



Method

  1. Preheat oven to 180°C (fan forced).
  2. Grease a 20 cm round cake tin.
  3. Cream together sugar, butter and vanilla until well combined.
  4. Add the eggs and beat well.
  5. Add the mashed bananas and mix well.
  6. Dissolve the bicarbonate soda in the milk and add into the mixture.
  7. Add the flour alternately and mix until well combined.
  8. Pour the batter into prepared cake tin.
  9. Bake for 60 minutes (approx.) until a skewer inserted comes out clean.
  10. Let cake cool completely on a wire rack before frosting.
