3 Bean Chili Con Carne
A delicious and nourishing mince beef stew with 3 bean. This easy one pot meal is even better the next day!Serves: 4
Ingredients
- 1 tablespoon olive oil
- 1 piece large onion, chopped
- 4 cloves garlic, chopped
- 1 piece medium size red capsicum
- 500 grams Australian Beef Mince, 82% meat and 18% fat
- ½ tablespoon ground cumin
- 1 teaspoon ground paprika
- ¼ teaspoon ground cinnamon
- 400 grams tin Mutti Polpa Chopped Tomatoes Organic
- 1 piece Beef Stock Pot dissolve in 2 cups boiling water
- 1 tablespoon brown sugar
- 400 grams tin Macro Organic Mexican Style 3 Bean Mix No Added Salt (red kidney beans, pinto beans and black beans), drained and rinsed
- 2 teaspoons Master Foods Celery Salt
To Serve:
- steamed rice
- nachos
- sour cream
- pitta chips
- crusty bread
Method
- Heat the oil in a large deep pan over a medium-high heat.
- Sauté the onions and garlic until soft. Add the capsicum and cook for 10 minutes approximately. Set aside.
- In the same pan, add the beef mince and cook until light brown in a medium-high heat. Tip out the excess oil from the pan and discard, if any.
- Return the sautéed onions, garlic and capsicum in the pan.
- Add the cumin, paprika and cinnamon. Cook for 2 to 3 minutes approximately until fragrant,
- Stir in the chopped tomatoes.
- Pour the beef stock and brown sugar.
- Bring to a boil then let it simmer uncovered and stirring occasionally, for 20-25 minutes approximately until the sauce is reduced and thickened.
- Add the 3 bean mix and cook for another 5 minutes approximately.
- Season with celery salt.
- Serve warm.
