3 Bean Chili Con Carne

A delicious and nourishing mince beef stew with 3 bean.  This easy one pot meal is even better the next day!
Serves: 4



Ingredients



To Serve:

  • steamed rice
  • nachos
  • sour cream
  • pitta chips
  • crusty bread




Method

  1. Heat the oil in a large deep pan over a medium-high heat.
  2. Sauté the onions and garlic until soft. Add the capsicum and cook for 10 minutes approximately. Set aside.
  3. In the same pan, add the beef mince and cook until light brown in a medium-high heat. Tip out the excess oil from the pan and discard, if any.
  4. Return the sautéed  onions, garlic and capsicum in the pan.
  5. Add the cumin, paprika and cinnamon. Cook for 2 to 3 minutes approximately until fragrant,
  6. Stir in the chopped tomatoes.
  7. Pour the beef stock and brown sugar.
  8. Bring to a boil then let it simmer uncovered and stirring occasionally, for 20-25 minutes approximately until the sauce is reduced and thickened.
  9. Add the 3 bean mix and cook for another 5 minutes approximately.
  10. Season with celery salt.
  11. Serve warm.
