Smoked Salmon Bánh Mì
Bánh mì is a popular street food in Vietnam, it is like a short baguette with thin, crisp crust and soft, airy texture. It's a combination of typical ingredients from French and Vietnamese cuisine. In Sydney a lot of bakery are serving pork roll or bánh mì. Smoked salmon bánh mì is so delicious and a healthy complete meal sandwich! Most of the ingredients can be prepared ahead of time. It's a good way of using smoked salmon. I think it's more practical just to buy a long crusty bread roll in your trusted local bakery. Baguettes have a shorter lifespan, it only lasts four to six hours and the best way is to eat it as fresh as possible. |

Ingredients
- 2 pieces long crusty bread roll
- ¼ cup mayonnaise
- 150 grams Ocean Blue Smoked Salmon (4 slices)
- ½ cup Quick Pickled Carrots 👈, drained
- 2 cups fresh lettuce, chopped
- 1 piece spring onion, sliced
Method
- Slice the bread rolls lengthwise half-way to open and spread a generous amount of mayonnaise inside.
- Lay gently the smoked salmon in each bread rolls, then top with lettuce, pickled carrots and spring onion fillings.
- Close the sandwich and serve immediately!
