Pan-Seared Forequarter Lamb Chops - Stove Top to Oven
Simply delicious pan-seared lamb chops!
Serves: 2 -3
Equipment: Oven safe frying pan
Ingredients
- 2 pieces Australian forequarter lamb chops, 400 grams (approx.)
- 2 cloves of garlic, peeled
- 1 teaspoon fresh rosemary leaves
- lemon zest of ½ lemon
- 2 pieces anchovies in olive oil, drained
- 2 tablespoons of extra virgin olive oil
- salt and freshly ground black pepper to taste
Method
- Place the garlic, rosemary, anchovies, lemon zest and extra virgin olive oil in the mortar and pestle, then grind the ingredients thoroughly. Season with salt and pepper to taste.
- Coat the forequarter lamb chops with the marinade.
- Marinate the meat for overnight or at least 30 minutes in the refrigerator with cover.
- Preheat the oven to 180°C.
- Heat the frying pan to medium high then pan sear the marinated forequarter lamb chop for 4 to 5 minutes each side until slightly brown.
- Finish it in the oven for 10 to 15 minutes.
- Let the cooked forequarter lamb chops to rest for 5 minutes before serving!
- Garnish with fresh rosemary.
