Australian Green King Prawn in Tamarind Broth with Baby Bok Choi (Sinigang na Sugpo)
A delicious Australian Green King Prawn in tamarind broth with baby bok choy is a nourishing soup. The Filipino's perfect winter food!

Ingredients
- 500 grams fresh Australian Green King Prawn, cleaned and shells intact
- 2 pieces medium size gourmet tomatoes, quartered
- 1 piece onion, quartered
- 1 thumb size ginger, thinly sliced
- 1 piece banana pepper
- 6 cups of water
- 10 pieces snake beans, sliced
- 1 - 2 tablespoons Knorr Sinigang sa Sampalok Mix
- 3 tablespoons fish sauce
- 1 teaspoon iodised salt
- 3 baby bok choy, quartered lengthwise
Method
- Devein the prawns with shell on using toothpick and clean well.
- In a cooking pot combine water, tomato, onion, ginger and then bring it to a boil for 15 to 20 minutes.
- Add the banana pepper, snake beans and Knorr Sinigang sa Sampalok Mix. Season with fish sauce and iodised salt.
- Add the prawn and baby bok choy simmer for 5 minutes approximately.
- Cover the pot then remove the heat.
- Serve hot with steamed rice!
