Baked Red Snapper Fillet (Queensland)

A great seafood selection at Mooloolaba Fish Market! My husband and I went there in the morning and bought a fresh Queensland red snapper fillet for our lunch. I just used some of the available ingredients that we have in our accomodation at Cotton Tree. We simply baked the fish with sliced  lemon, black pepper, iodised salt and extra virgin olive oil. The snapper has really very good clean taste and very tender. We are so happy that Mum Lynne loves it!

Ingredients
  • 0.594 kilograms Queensland red snapper fillet, skinless 
  • 1/2 piece of lemon, sliced
  • 1 tablespoon of extra virgin olive oil
  • Iodised salt to taste
  • Ground black pepper to taste 


Method
  1. Preheat oven to 180°C.
  2. In the baking dish rub the snapper fillet with extra virgin olive oil. 
  3. Season with salt and black pepper. 
  4. Put the sliced lemon on the top.
  5. Cover the baking dish with aluminum foil tightly.
  6. Bake the fish for 30 minutes or until cooked through. 
  7. Serve immediately!
