Anzac Biscuits with Almonds

A delicious Anzac biscuits with almonds, a simple treat any time of the year!



Makes: 11 (approx.)


Ingredients 
  • 1 cup Uncle Tobys Rolled Oats Traditional
  •  3/4 cup shredded coconut 
  • 1 1/4 cup plain flour, sifted
  • 1 cup flaked almonds
  • 1/2 cup brown sugar
  • 150 grams unsalted butter
  • 2 tablespoons golden syrup 
  • 1/2 teaspoons Bi-Carb soda
  • 2 tablespoons boiling water


Method
  1. Pre- heat oven 170 °C fan forced.
  2. Line 2 baking trays with non stick baking paper.
  3. Sift the flour.
  4. Combine all dry ingredients except for Bi-Carb soda.
  5. In a small sauce pan, melt the butter and golden syrup over low heat. Mix the boiling water and Bi-Carb soda, then add in the butter mixture. Stirring to combine.
  6. Pour the liquid mixture in the dry ingredients. Mix thoroughly, until well combined.
  7. Roll into a ball, a ⅓ cup of mixture then, place it in the prepared baking tray with at least 1 inch apart and press down slightly with the fork.
  8. Bake for 20 minutes until golden brown.
  9. Let it cool and stored in airtight.
