Anzac Biscuits with Almonds
Makes: 11 (approx.)
Ingredients
- 1 cup Uncle Tobys Rolled Oats Traditional
- 3/4 cup shredded coconut
- 1 1/4 cup plain flour, sifted
- 1 cup flaked almonds
- 1/2 cup brown sugar
- 150 grams unsalted butter
- 2 tablespoons golden syrup
- 1/2 teaspoons Bi-Carb soda
- 2 tablespoons boiling water
Method
- Pre- heat oven 170 °C fan forced.
- Line 2 baking trays with non stick baking paper.
- Sift the flour.
- Combine all dry ingredients except for Bi-Carb soda.
- In a small sauce pan, melt the butter and golden syrup over low heat. Mix the boiling water and Bi-Carb soda, then add in the butter mixture. Stirring to combine.
- Pour the liquid mixture in the dry ingredients. Mix thoroughly, until well combined.
- Roll into a ball, a ⅓ cup of mixture then, place it in the prepared baking tray with at least 1 inch apart and press down slightly with the fork.
- Bake for 20 minutes until golden brown.
- Let it cool and stored in airtight.
