Sweet and Chewy Anzac Biscuits


The Anzac biscuit is popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter, golden syrup, baking soda, boiling water and dessicated coconut.





A sweet and chewy Anzac biscuit!


Makes: 20 (approx.)


Ingredients 
  • 1 cup rolled oats
  • 1 cup dessicated coconut 
  • 1cup plain flour, sifted
  • 1 cup brown sugar
  • 125 grams unsalted butter
  • 2 tablespoons golden syrup 
  • 1 teaspoons Bi-Carb soda
  • 2 tablespoons boiling water


Method
  1. Pre- heat oven 150 °C fan forced.
  2. Line 2 baking trays with non stick baking paper.
  3. Sift the flour.
  4. Combine all dry ingredients except for Bi-Carb soda.
  5. In a small sauce pan, melt the butter and golden syrup over low heat. Mix the boiling water and Bi-Carb soda, then add in the butter mixture. Stirring to combine.
  6. Pour the liquid mixture in the dry ingredients. Mix thoroughly, until well combined.
  7. Roll into a ball, a tablespoonful of mixture then, place it in the prepared baking tray with at least 1 inch apart and press down slightly with the fork.
  8. Bake for 15 minutes until golden brown.
  9. Let it cool and stored in airtight container.
