Spanish Style Blue Mackerel

Simple but delicious Spanish style seafood recipe using a flavourful blue mackerel fish. A budget friendly meal!



Ingredients
  • 0.800 kilograms fresh blue mackerel, cleaned and sliced
  • 1/2 cup of extra virgin olive oil
  • 1/4 cup of vinegar
  • 8 pieces of fresh bay leaves
  • 1/2 tablespoon of peppercorn 
  • 2 big cloves of garlic, sliced
  • 1 piece of carrot, peeled and sliced 
  • 3 teaspoons of chili flakes
  • 1 tablespoon of iodised salt
  • Water (enough water just to cover the fish)


Method
  1. Place the fresh bay leaves, peppercorn, garlic and carrot in the bottom of the pan.
  2. Add the sliced blue mackerel.
  3. Sprinkle the chili flakes and salt.
  4. Pour the extra virgin olive oil over the fish.
  5. Add enough water just to cover the fish.
  6. Boil it in low to medium heat. 
  7. Once it boils, add the vinegar. Cook it for 1 hour and 30 minutes or until only oil left.
  8. Serve with steamed rice.
