Spanish Style Blue Mackerel
Simple but delicious Spanish style seafood recipe using a flavourful blue mackerel fish. A budget friendly meal!

Ingredients
- 0.800 kilograms fresh blue mackerel, cleaned and sliced
- 1/2 cup of extra virgin olive oil
- 1/4 cup of vinegar
- 8 pieces of fresh bay leaves
- 1/2 tablespoon of peppercorn
- 2 big cloves of garlic, sliced
- 1 piece of carrot, peeled and sliced
- 3 teaspoons of chili flakes
- 1 tablespoon of iodised salt
- Water (enough water just to cover the fish)
Method
- Place the fresh bay leaves, peppercorn, garlic and carrot in the bottom of the pan.
- Add the sliced blue mackerel.
- Sprinkle the chili flakes and salt.
- Pour the extra virgin olive oil over the fish.
- Add enough water just to cover the fish.
- Boil it in low to medium heat.
- Once it boils, add the vinegar. Cook it for 1 hour and 30 minutes or until only oil left.
- Serve with steamed rice.
