Sinigang na Salmon Belly sa Miso



The salmon belly has a huge amount of flavour due to the large fat content which is rich in omega 3. It is good for us if eaten in moderation.
I remember, my mother cooks fish sinigang sa miso for us. A healthy steaming bowl of sinigang is so comforting. Truly a classic Filipino sour soup. This seafood recipe is easy to make.




Serves: 2-3


Ingredients

  • 500 grams salmon belly 
  • 1 piece onion, sliced
  • 2 pieces tomatoes, sliced
  • 3 cloves of garlic, chopped
  • A thumbsize of ginger, chopped
  • 5 cups of water
  • 1 piece whole long green chili
  • 2 tablespoons fish sauce
  • 2 tablespoons white miso (shiro miso
  • Freshly squeezed juice from 1 whole lemon (small size)
  • 1 bunch fresh mustard leaves
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste


Method

  1. In a large pot, heat the oil and sauté garlic, onion and ginger. Then add tomatoes until soft. 
  2. Add the salmon belly and cook for a minute then season with fish sauce.
  3. Add 5 cups of water and cover the pot. Let it boil. Add long greeen chili and simmer for 15 minutes.
  4. In the last 5 minutes of cooking add the miso paste.
  5. Then add the freshly squeezed lemon juice.
  6. Lastly, add the mustard leaves then cover the pot. Lastly turn off the stove.  The residual heat will cook the green vegetable leaves.
  7. Transfer into a serving bowl.
  8. Serve with steamed rice and a soy sauce with chili from the broth for dipping sauce.
