Sinigang na Salmon Belly sa Miso
The salmon belly has a huge amount of flavour due to the large fat content which is rich in omega 3. It is good for us if eaten in moderation.
I remember, my mother cooks fish sinigang sa miso for us. A healthy steaming bowl of sinigang is so comforting. Truly a classic Filipino sour soup. This seafood recipe is easy to make.
Serves: 2-3
Ingredients
- 500 grams salmon belly
- 1 piece onion, sliced
- 2 pieces tomatoes, sliced
- 3 cloves of garlic, chopped
- A thumbsize of ginger, chopped
- 5 cups of water
- 1 piece whole long green chili
- 2 tablespoons fish sauce
- 2 tablespoons white miso (shiro miso
- Freshly squeezed juice from 1 whole lemon (small size)
- 1 bunch fresh mustard leaves
- 2 tablespoons of extra virgin olive oil
- Salt to taste
Method
- In a large pot, heat the oil and sauté garlic, onion and ginger. Then add tomatoes until soft.
- Add the salmon belly and cook for a minute then season with fish sauce.
- Add 5 cups of water and cover the pot. Let it boil. Add long greeen chili and simmer for 15 minutes.
- In the last 5 minutes of cooking add the miso paste.
- Then add the freshly squeezed lemon juice.
- Lastly, add the mustard leaves then cover the pot. Lastly turn off the stove. The residual heat will cook the green vegetable leaves.
- Transfer into a serving bowl.
- Serve with steamed rice and a soy sauce with chili from the broth for dipping sauce.
