Mackerel Omelette - Tinned Fish Recipe
This canned seafood recipe is inexpensive and easy to cook. The Sole Mare mackerel fillet in olive oil is a good quality tinned fish and also a good source of Omega 3 which is available in Woolworths.
Serves: 2
Ingredients
- 3 fresh eggs
- 1 can Sole Mare Mackerel Fillets in Olive Oil (120 grams), drained
- 1 tablespoons chopped onion
- Salt and pepper to taste
- Extra Virgin Olive oil for frying
Method
- Beat the eggs in a bowl with salt and pepper to taste until just mixed.
- Heat the oil in the frying pan. Saute the onion then add the mackerel.
- Pour the beaten egg over the mackerel and slowly fold over about one-third of mixture, continue cooking until set then fold again.
- Serve immediately.
