Mackerel Omelette - Tinned Fish Recipe

This canned seafood recipe is inexpensive and easy to cook.  The Sole Mare mackerel fillet in olive oil is a good quality tinned fish and also a good source of Omega 3 which is available in Woolworths.




Serves: 2


Ingredients 
  • 3 fresh eggs
  • 1 can Sole Mare Mackerel Fillets in Olive Oil (120 grams), drained
  • 1 tablespoons chopped onion
  • Salt and pepper to taste
  • Extra Virgin Olive oil for frying 

Method 
  1. Beat the eggs in a bowl with salt and pepper to taste until just mixed.
  2. Heat the oil in the frying pan.  Saute the onion then add the mackerel.
  3. Pour the beaten egg over the mackerel and slowly fold over about one-third of mixture,  continue cooking until set then fold again.
  4. Serve immediately.
