Slow Cooker Corned Beef


So tender and flavourful corned beef!



Serves: 6


Equipment: Slow cooker, 6.5 liter


Ingredients
  • 1.5 kilograms piece corned beef silverside, rinsed
  • 4 pieces fresh bay leaves
  • 8 pieces cloves
  • 1 piece onion, peeled and cut into half
  • 10 pieces peppercorn
  •  1 piece carrot, peeled and chunked
  • 1 stalk celery, sliced (optional)
  • 1 teaspoon mixed spice 
  • 2 tablespoons brown sugar
  • 2 tablespoons malt vinegar 
  • Water (enough to cover the corned beef silverside)

 Method
  1. Rinse the corned beef silverside with cold water.
  2. Stick the cloves in the onion.
  3. Place the corned beef silverside, carrot, celery, mixed spice, onion with cloves, fresh bay leaves, peppercorns, brown sugar and malt vinegar in the slow cooker.
  4. Add enough water to just cover the corned beef silverside.
  5. Cover the slowcooker and cook for 8 to 9 hours on low.
  6. Remove the corned beef in the cooking liquid.
  7. Carve into slices.
  8. Serve immediately or store in refrigerator.
