Basic Crêpe
Serves: 8
Ingredients
- 1 cup plain flour, sifted
- A pinch of salt
- 1 1/4 cups of fresh milk
- 2 eggs
- 3 teaspoons butter, melted
- butter for cooking
Method
- Sift the flour and salt into a bowl.
- Make a hole in the centre of the flour.
- Add eggs and 1/4 cup of milk and beat. Then add the remaining 1 cup of milk and melted butter.
- Heat and spread a small butter in a a crêpe pan.
- Pour in 1/3 cup of batter, tilting the pan so the batter covers the base thinly and evenly.
- Cook on high heat until lightly brown underneath.
- Turn crêpe and cook the other side.
- Remove from pan and keep warm.
- Continue until the batter is used.
Note: To keep crêpe warm, set the oven on "keep warm" (fan-forced). Place crêpe covered with foil, in oven until needed.
