Basic Crêpe


Crepe is a very thin layer of pancake that can be topped with sweet or savoury filling! 




Serves: 8


Ingredients

  • 1 cup plain flour, sifted
  • A pinch of salt
  • 1 1/4 cups of fresh milk
  • 2 eggs
  • 3 teaspoons butter, melted
  • butter for cooking 

Method 

  1. Sift  the flour and salt into a bowl.
  2. Make a hole in the centre of the flour.
  3. Add eggs and 1/4 cup of milk and beat. Then add the remaining 1 cup of milk and melted butter.
  4. Heat and spread a small butter in a a crêpe pan.
  5. Pour in 1/3 cup of batter, tilting the pan so the batter covers the base thinly and evenly.
  6. Cook on high heat until lightly brown underneath.
  7. Turn crêpe and cook the other side.
  8. Remove from pan and keep warm.
  9. Continue until the batter is used.


Note: To keep crêpe warm, set the oven on "keep warm" (fan-forced). Place crêpe covered with foil, in oven until needed.
